
Anzac Biccys

INGREDIENTS
1 1/2 cups rolled oats
1 1/4 cups buckwheat flour or oats, blended
1/2 cup honey
1/3 cup desiccated coconut
1 egg
1/2 cup olive oil
1/2 tsp baking soda
Salt
DIRECTIONS
Pre–heat the oven to 170°C and line a tray with baking paper.
Add all ingredients to a mixing bowl and mix well. Using your hands, roll the mixture into small balls about the size of a golf ball and place 2cm apart on the baking tray.
Press down lightly on each ball to flatten and bake for 15–20 minutes. Once cooled, store in an airtight container.
